Beef Tips Goulash

Ingredients
2 Tablespoons of Butter
1.5 lbs. of Cubed Beef
2 Onions
2 Garlic Cloves
2 Tablespoons Tomato Paste
2 Tablespoons Paprika (Sweet or Smoked)
2 Cups Beef Broth
1/2 Cup Sour Cream
Heat the butter in a large pot over medium-high heat.
Add the meat and brown well and then remove from the pot and set aside.
In that same pot, add the chopped onions and cook them until they are soft.
Add 2 minced garlic cloves and sauté for 1 minute.
Stir in Tomato Paste and Paprika. Mix well and cook it for 2-3 minutes.
Return the meat to the pot and pour in the beef broth and bring it to a boil.
Reduce the heat and cover. Cook for at least 2 hours.
After cooking, slowly and carefully stir in the sour cream.
Salt and Pepper to taste.
Serve of Noodles, Mashed Potatoes or Rice.
